Gourmet tomato & onion sausages with kale


  • 6 gourmet tomato & onion sausages
  • 1 medium onion diced
  • 1/2 red capsicum diced
  • 2 leaves kale (or spinnach or silver beet)
  • 1 teaspoon of tomato paste
  • 2 tablespoons of sourcream
  • 1 small chilli
  • 1 teaspoon of cornflour
  • 1 tablespoon olive oil
  • Spices - paprika, salt and cracked pepper
  • 1 cup water
  • 1 1/2 cups rice or 1 3/4 cups spiral pasta

Gourmet Tomato & Onion sausages with Kale

Cook time: 25 min
Serves: 4


Cook the 6 gourmet tomato & onion sausages first (about 20min). Let cool for a few minutes in order to slice into 5-8mm pieces.

Using a medium saucepan, add some olive oil, chopped onion and chunky pieces of red capsicum and fry for about 5 minutes. Chop in a small chilli (optional).

Next add the sausages and spices (paprika, cracked pepper, salt), roughly chopped Kale leaves (or spinnach - silver beet). Add in the tomato paste and sour cream.

Make a thickener with 1 teaspoon corn flour and water, and stir into the saucepan. Cook for about 15 minutes, stirring occasionally.

Can be served with pasta, rice or some steamed veggies.
